Chicken Salad Chick expands to Spring Hill; Cool Springs location in the works

The line was wrapped around the building at Chicken Salad Chick’s newest location in Spring Hill on Tuesday morning.

Chicken Salad Chick offers 12 different varieties of chicken salad that are made from scratch every single day. 

The Auburn, Alabama-based chain began when co-founder Stacy Brown started making chicken salad for friends, teachers and neighbors out of her home. Within three weeks, Brown and her future husband, Kevin, had more business then they could handle.

A call from the local health department stating “you cannot cook anything in your home and sell it” was the motivation the two founders needed to open up their own restaurant.

The Spring Hill location is the 92nd restaurant for Chicken Salad Chick and the 20th corporate-owned location. It can seat 80 people and offers drive-thru service as well.

The grand opening festivities included the first 100 customers in line receiving free chicken salad for a year.

Murfreesboro resident Gabriel Green, a chicken salad lover, was the first person in line waiting to receive the free offer. With a camping chair and pillow nearby, Green had been camped outside the store since 7:30 p.m. the previous night.

“I’m pretty pumped whenever a new [Chicken Salad Chick] opens,” Green said. “It feels pretty good, but pretty tiring too.”

Other than a little bit of exhaustion, the free chicken salad for a year was worth the wait for Green.

“I’m probably going to get the Fancy Nancy chicken salad today,” Green said. 

The Spring Hill Chamber of Commerce staff and chamber ambassadors gathered for the ribbon cutting in congratulating the new business. Rebecca Melton, the chamber’s executive director, acknowledged that the restaurant scene is booming in Spring Hill, but whether it is chain restaurants or mom and pop restaurants, they all give back to the community.

“They’re wonderful assets to the community,” Melton said.   

Melton added that many of the local Spring Hill businesses host fundraisers and community spirit nights and sponsor local sports teams.

Chicken Salad Chick’s CEO, Scott Deviney, shared that they open restaurants where the demand is and Spring Hill fit the mold.

“We’re not in a big hurry, we’re just taking care of our communities in which we operate,” Deviney said. “Our concept is unique; it’s the only one that specializes in fresh, made-from-scratch, 12 flavors of chicken salad.”  

According to Deviney, the approximately 2,800-square-foot Spring Hill location was two years in the works from start to finish.

“Spring Hill was this great, nice, close-knit community that fits perfectly with our company,” Deviney said. “It’s a fantastic community of people.”

Chicken Salad Chick is already in the process of building another location in Cool Springs, located near Lifetime Fitness. It will be at 5050 Carothers Parkway that will open “later this year, early next year,” Deviney said.

“Our purpose as a company is to spread joy, enrich lives and serve others,” Deviney said. “We’re are ready to be a part of this community and take care of our team, take care of our guests every day they walk through the door.”
